3 easy & delicious ways to cook rice

This week Ian from Chef Vegan and I created a video showing  3 delicious and easy ways to cook rice to add some delicious flavours. We made Cumin Rice, Lemon Rice and Nasi Kuning (recipe inspired by Daily Cooking Quest).

Simple ingredients and quick and easy – let’s make boiled rice tasty!!

Prep time: 2 minutes
Cooking time: 25 – 30 minutes
(Each recipe – serves 4)

Cumin Rice

Ingredients

370g (13 oz) rice
700ml (24 fl oz) water
1 onion finely chopped
4 cloves garlic finely chopped
2 tsp cumin seeds
1 cinnamon stick
1/2 tsp mustard seeds
6 cardamom pods
Salt & pepper
Zest of one lemon
Chopped fresh coriander to serve

Method

  1. In a pot on medium heat roast cumin, mustard seeds, cardamom and cinnamon stick fragrant, take care not to burn.
  2. Add rice, water, onion, garlic and cook until rice is fluffy (about 25 minutes)
  3. Add lemon zest and chopped coriander and mix through the rice prior to serving

Lemon Rice

Ingredients

370g (13 oz) rice
700ml (24 fl oz) water
Zest of 2 Lemons
3 tsp fresh ground black pepper
2 tsp Onion powder
2 tbsp Tamari or soysauce
1 Lemon juice

Method

  1. Add rice, water, onion powder, ground pepper, lemon zest and cook until rice is fluffy (about 25 minutes)
  2. Add lemon juice and tamari and mix through prior to serving

Ingredients – Nasi Kuning (Turmeric Rice)*

370g (13 oz) rice
700ml (24 fl oz) water
100ml coconut milk
1 kaffir lime leaf
1 stick of lemon grass
1 bay leaf
2 tsp turmeric powder
Salt to taste
